CHEF MANAGER

The Chef Manager position plays a vital role in the department by overseeing all daily menu planning and execution practices throughout the culinary team. This individual works directly with the culinary team and other leadership to conceptualize and execute the daily menu offerings in all internal service locations. This will include new service openings as well as special events. This individual will provide feedback and corrective actions regarding recipe creation and execution, ordering procedures, procurement of ingredients, and will oversee production throughout all kitchen teams.

The Chef Manager will oversee work planning materials, conduct internal inspections of all services, including 3rd party vendors, and verify that our practices are being properly executed throughout all culinary operations. The Chef Manager supports the mission by ensuring our food quality, menu balance, and service standards meet the expectations of the company.

RESPONSIBILITIES:

  • Oversee all menu creation and production in multiple service formats
  • Conceptualize dishes and recipes for high volume large batch production
  • Set and enforce standards in multiple kitchen operations
  • Monitor quality and consistency of food products in all service locations
  • Maintain clean and safe work stations throughout kitchens
  • Menu writing/planning, and product sourcing
  • Maintain service standards with FOH
  • Trains staff on cooking technique, recipe execution, and menu composition
  • Enforce proper food safety practices with Food Service staff and leads
  • Coordinate and enhances time management for team
  • Oversee kitchen and equipment maintenance
  • Support hiring and team management for Food Service staff

BASIC QUALIFICATIONS:

  • High school diploma or equivalency certificate
  • Culinary degree and 7+ years industry experience; or 10+ years industry experience

PREFERRED SKILLS AND EXPERIENCE:

  • Culinary degree
  • Leadership experience in a multi-unit operation
  • Experience in corporate environment
  • Experience with batch cooking or high-volume operations
  • Has lead groups in large team settings of 10 or more staff members
  • Customer service or guest interaction experience
  • Strong basic math and measurement conversion skills
  • Advanced knowledge of kitchen equipment and safe kitchen operations
  • Strong time management skills
  • Excellent communication skills both written and verbal
  • Proficient in all cooking methods, sauce making, and meat and vegetable preparations
  • Experienced with Microsoft Office and Outlook

ADDITIONAL REQUIREMENTS:

  • Ability to carry large heavy items, such as dishes in tubs or trays unassisted (up to 25 lbs.)
  • Able to stand for long periods of time – up to 8 hours a day
  • Must be able to work all shifts and available for overtime and weekends as needed
  • Able to perform frequent bending, stooping, and lifting of objects
  • Must participate in internal leadership and development training
  • Experience opening new operations and/or creating operational procedures from the ground up
  • Must have or be able to obtain manager level food safety certification
